Chicken Sausage & Goat Cheese Wrap for Lunch! |
Daily Tidbit: I love Goat Cheese! Everything tastes better with Goat Cheese! I managed to fit it into two of my meals today – YUM! If you need inspiration of things to do with Goat Cheese – check out the link below to Real Simple Magazine, they have over 50 recipes which incorporate it. And they ALL look yummy, because again, everything tastes better with Goat Cheese!
Breakfast: Peanut Butter & Banana English Muffin
Whole Wheat English Muffin
½ Banana, sliced
1 tbsp All Natural, low Sodium Peanut Butter
5 oz. glass of OJ
Regular Coffee, black
Lunch: Chicken Sausage & Goat Cheese Wrap
1 Medium size Whole Wheat wrap with:
1 link of Chicken Sausage slices
½ Avocado
Toasted Pine Nuts
Goat Cheese (this was the ‘glue’ inside the wrap to hold it all together!)
Tomato slices on the side, topped with some EVOO drizzle
Water with Lime
Regular Coffee, black
Snack: 1 cup Curry Cauliflower Salad with Toasted Pine Nuts & 1 tsp of Apricot jelly
Snack: 1/2 of the above depicted Trader Joe's 72% Cacao Dark Chocolate, Water
Snack: 1 Plain Hard-boiled Egg, Fat Free Milk
Dinner: Pizza Night!
Whole Wheat Pizza Dough (store bought)
No Salt Added Marinara
Part Skim Mozzarella
Black & Green Olives
Goat Cheese
Dessert: TOO FULL! (Yes, I split the pizza with my husband - ate 4 slices!)
