French Toast PBJ for Breakfast!

Daily Tidbit:  I have seen loads articles about cleansing and detoxing the body, and though I'm skeptical of juice only diets and/ or fasting, I do like the idea of "clean eating" and detoxing the body every once in a while.  So, in the spirit of the New Year and fresh beginnings, I have decided to quit drinking wine and/ or any alcohol for the month of January.  If you are considering a cleanse or incorporating more 'clean eating' into your life, here are some good tips and some super yummy looking meal ideas from Shape Magazine:

French Toast PBJ


Breakfast:  French Toast PBJ!
3 thin slices of Ciabatta Bread French Toast with 1 tbsp Creamy All Natural Peanut Butter & 2 tsp All Fruit Cherry Jelly (divided between 3 slices)
5 oz Orange Juice 

Regular Coffee, sprinkle Cinnamon, splash Fat Free Milk

Lunch:  Tacos!
 
2 Organic Zero Sodium Corn Taco Shells, broken in half
3/4 cup heated Vegetarian Refried Beans with Jalapenos
1/2 cup Homemade Fresh Salsa (recipe below)
1/2 Avocado
1 tbsp Cheddar Cheese
Decaf Coffee, 1/2 tsp unsweetened Dark Chocolate Cocoa, splash Fat Free Milk

Snack:  2 Small Trader Joe's Chocolate Peanut Butter Cups

Cheeseburger Pie

Dinner: Cheeseburger Pie with Peas & Zucchini
1 large slice of Cheeseburger Pie (recipe below)
Water with Lemon

Dessert: 1 cup of fresh cut Cantaloupe, Water

Cheeseburger Pie Recipe: 

We found this recipe on our large box of Bisquick called "Cheeseburger Pie" that we decided to try, tweaking it a bit by adding lots of Veggies!

I enjoy taking a yummy recipe like this and making it just a touch more healthy for me and my family; that way we get the best of both worlds! 

 
Preheat Oven to 400 degrees.
Brown 1 pound of 93% lean Ground Beef , add 1/2 chopped White Onion, 1 cup of Peas,  and 1 cup of some other Veggie (tonight I used 1 large Zucchini, chopped), cooking until hot.  Add salt to taste.  Transfer to an oven safe, greased pie plate or casserole dish.  Top with 1/2 cup shredded Cheddar Cheese.  In a separate bowl mix 1/2 cup of Bisquick, 2 eggs and 1 cup of Fat Free Milk.  Once mixed, pour on top of Beef, Veggies & Cheese and put into oven for 20-25 minutes.

Fresh Salsa Recipe:
Into food processor put:
1 large clove Garlic (process this first before adding other ingredients) 1/4 Large Red Onion 1/4 Large White Onion Juice of 1/2 Lime Large bunch of Cilantro  1 Pint Cherry Tomatoes Salt, to taste
   

Process.  While Processing, stream in 1 tbsp EVOO.  Transfer to bowl.  Mix in 1/4 cup sliced Scallions.  Refrigerate to allow flavors to meld.
